今日の「天職人」は、岐阜県土岐市鶴里町の「自然薯料理屋」。（平成23年10月1日毎日新聞掲載）
釣瓶落としの秋の夜も 日毎早まり冬支度 一霜降りる頃合で 爺に引かれて沢へ入る 蔓と葉の色見定めて 爺が唐鍬土をかきゃ やがて顔出す髭面の 大地の珍味自然薯が
岐阜県土岐市鶴里町の自然薯料理みくに茶屋、女将の河合昌子さんを訪ねた。
山間の茶屋。
品書きに「自然薯刺身」とある。
あれこれと想像力を巡らせては見るものの、さっぱり見当が付かぬ。
ならばいっそと所望した。
すると刺身皿に磯辺巻きのような代物が、香の物と共に盛り付けられて登場。
「海苔で巻いてあるのが自然薯。作り方は、綺麗に洗って細かな根を焼き落とす。そして卸してから当り鉢に入れ、山椒の擂粉木で同じ方向に１時間擂る。すると空気を取り込んで、旨味が引き出される。機械で擂ると、薯の繊維がブツブツに切れてしまうでね」。
ワサビ醤油にちょっと浸していただいた。
餅の様な弾力と、ほのかな土の香りに包まれる。
「どうやね？長芋と違い真っ白じゃないやろ。ここらの自然薯は、鉄分豊富な赤土で育っとるで、卸したはなから土色なんやて」。主の辰巳さんが、自慢げに一くさり。
辰巳さんは昭和18（1943）年、陶土採掘を営む家の長男として誕生。
「父も自然薯掘りが好きやった。秋になって薯の蔓が上り、葉が黄色く色付くと、そろそろやってなもんでな。子ども用の唐鍬作ってもらい、一緒に沢を下りながら薯掘ったもんや。そこらの芒や萱に包んで、蔓で束ねて持ち帰るんやて。ちょうど10月末から11月の初め頃、一霜下りる頃が一番の旬やでな」。
高校を出ると、建設会社に就職。
「土木が専門やったで、全国各地でトンネル掘りやわ」。
昭和41年、名古屋出身の昌子さんと結ばれ、３男１女を授かった。
「結婚した頃、新潟におりまして。頸城トンネルの工事を担当しとったんやて。でもあっちの人らは、薯掘る習慣が無いようでな。私が鎌一丁でよおけ掘って持ち帰ったら、家内が薯の皮を皆剥いてしまって」。
辰巳さんが笑い飛ばすと、「あんたと違って、都会育ちやで」と、妻がすかさず切り返した。
昭和49年、体調を崩し、それを機に転職。
家族と共に実家へ引き揚げ、陶器販売の会社へ勤務した。
昭和56年、街道沿いの実家の庭先に、仲間と掘ったばかりの自然薯を並べた。
「ゴルフ帰りの客が、土産にちょうどええって」。
毎年秋に自然薯が並ぶのを、心待ちにする遠来の客も増えた。
平成3年、昌子さんがみくに茶屋を開業。
「私はその３年後に、家内からスカウトされたんやて」。
夫婦の第二の人生が始まった。
「ここらじゃ自然薯を、正月の２日に食べる風習があったんやて。出世薯だってゆうてな」。
秋に蔓から種のムカゴが落ち、春に芽を吹き秋から冬は土篭もり。
次の春、子は親薯の養分を肥やしに、倍の大きさへと成長する。
「薯を掘るとわかるわ。皮だけになった親薯が、まるでわが子の成長を見守るかのように、ひっそり寄り添って、そっと務めを終えとるんやで。いじらしいもんや」。
薯を片手の昌子さんが、愛おし気につぶやいた。

そうそう ムカゴを茹でて食べてました。名前が思い出せなくて ムカゴと言っていました。
懐かしいです。
お茶の木のそばに植えてあってツルの根元に印がつけてありました。
最近では隣のおじさんが ツルはみっともないから「切ってまえ 切ってまえ」と「そうなんですか？」と思いながら切ってしまいました。
それを思い出して「あんたが大将！
おいらが子分〜♪」と歌いながら
太めのツルを切って2週間後に
見に行くと なんとも美しい藤の花が咲いていました。
「あなたは藤の花だったのね」と思わず言ってしまいました。
蔓だけ見ても、果たしてそれが何の蔓なのか、ぼくなんぞの素人には、さっぱり見分けが付きませんねぇ。
母がすり鉢でゴリゴリと、とろろご飯を作ってました。大人たちが美味しそうに食べていたので私も一口。「ゲッ!!」無理〜。今は食べられますよ(๑´ڡ`๑)
焼き魚に麦とろご飯なんて、もう最高です！
自然薯って
山に入って「蔦」を目印に探して
土の中を掘ってゲットするんですよねぇ！
食べた事がありません・・
長芋より自然薯の方が粘りが違うって聞いた事があります。
自然薯って言うくらいだから自然に育ったから滅多に
お目にかからないのか？
オカダさんとも滅多にお目にかかれないけど
オカダさんは超自然人間だった！

ゴツゴツとした岩を搔い潜り、それでも根を這わせて行くなんて、実に健気で見上げるほどの根性と生命力があるんですよねぇ。

友達のお父さんが自然薯掘りをされていたので お裾分けがありましたから 少しだけ 贅沢にいただいていましたが 掘り終わる迄のご苦労を考えると ちょっぴり ちょっぴり (✷‿✷)

自然薯のあの独特な香りって、ついついそそられちゃうんですよねぇ。
酒はやっぱり冷酒が合いそうですかねぇ。
自然薯を食べる時は いつも とろろご飯にしちゃいます。
自然薯自体の味も味わいたいから 出し汁を入れる際 慎重になる時も(笑)
久しく食べてないなぁ〜。
今度調理する時は とろろ以外の料理にしてみようかな⁈ ( ◠‿◠ )
とろろご飯を夢中になって食べちゃうと、食べ終えた後入念に口の周りを拭わないと、口の周りがかゆくなっちゃって仕方ないですよねぇ。

池田山の山頂近くに自然薯定食を出す店が期間限定でありました。5年前まではありました。掘建て小屋のような店で頂きました。大当たりの美味しい時期もあれば、少し生臭いときもありました。今もあるのでしょうか。
大自然が育んだ味わいは、その年その年の気象条件などの要因で、大自然の恵みも味わいが異なるものなんでしょうかねぇ。
