「天職一芸～あの日のPoem 272」

今日の「天職人」は、津市大門の「蜂蜜まん職人」。（平成20年3月25日毎日新聞掲載）

今日は臍繰（へそく）り叩き出し　何ぞどこぞで買うたろと　　　　妹連れて駆け出した　蜂蜜まんの店先へ　　　　　　　　　　　　　二つ手にして一目散　町の外れの蓮華畑　　　　　　　　　　　　　野辺の花見と洒落込めど　餡の香りに蜂が寄る

津市大門、蜂蜜まん本舗。三代目蜂蜜まん職人の水谷栄希さんを訪ねた。

「子供の頃は、よう友達に『誕生プレゼントに蜂蜜まんな』ってせがまれて。お陰で友達には恵まれたけど」。栄希さんは、引っ切り無しに訪れる客を目で追った。

蜂蜜まん本舗は、昭和28（1953）年に祖父が創業。

「曽祖父が松阪で養蜂園を営んでいた関係で、伊勢のパンじゅうをヒントに蜂蜜を加えたのが始まりなんやさ」。

栄希さんは昭和48（1973）年、一人息子として誕生。

「母は長女でして、それで婿を取ってぼくを産んだんです。でもピアノの講師の仕事を持っとったもんで、何かと忙しく子育ては祖父母にまかせっきり。だからほとんど小中学校へは、祖父母の店から登下校してましたんさ」。

やがれ両親が離婚。

栄希さんは関東の大学へと進学し、外食系の企業に就職した。

「祖父から『3年間は外で飯食うてこい』って言われたもんやで」。

ところが入社から半年、祖父が体調を崩し急遽店を閉める事に。

「様子見に帰って来たら、暢気なことゆうとる場合じゃありませんて。閉まった店の前で、お客さんが『いつ開くんやろう』って、仰山並んでしもて。それで会社を辞める準備で東京に戻ったんです。そしたら祖父の病状が急変。家へ帰った途端に、危篤状態ですわ」。

孫の到着を見届けるように、祖父は息を引き取った。

「大学時代の4年間、夏休みと冬休みに祖父からミッチリ教え込まれとったから、何とか見よう見真似で」。

俄仕立ての職人の交代劇。

しかし蜂蜜まんをこよなく愛する客は、店の前に列を成し、時には苦言を呈しながら若旦那の行く末を支え続けた。

平成17（2005）年、友人の紹介で優子さんと結婚。

「ありがとうございました」。店頭から優子さんの明るく元気な声が響き渡った。

「家は今でも経木（きょうぎ）に包むんです。せっかくの焼き立てが、汗をかいてパリッとした食感が失せてもうたらかなんで」。

今も昔も変わらぬ、庶民の味蜂蜜まんは、毎朝7時から漉（こ）し餡を炊き上げることに始まる。

そして小麦粉・卵・水に秘伝の隠し味を添え、生地を練り上げる。

後は丸く窪（くぼ）んだ鉄板に生地を流し込み、餡を添え生地で包み込むように焼き上げれば出来上がり。

「生地を練り込む時の気泡が、大き過ぎても小さ過ぎてもあかんのさ。頃良い大きさの気泡やと、パッと膨らんで食感もパリッと焼き上がるもんなんやさ」。

10月の祭の時期には、一日で10,000個の売れ行きとか。

「メッチャ忙して、昼飯もろくすっぽ食べれやんだ時なんか、お腹空いてこっそり摘み食いしたるんさ。そんな時、心底美味いなぁって我ながら惚れ惚れすんやさ」。

庶民が愛する逸品は、作り手も庶民であったればこそ生み出せるに違いない。

  2. 子供の頃、近くに大判焼き屋さんが出来た時、焼いている所を見るのが好きでした。今は、御座候に列んでいる時は焼いている姿をついつい見入っちゃいます。蜂蜜まんは、食べたこと無いから味を想像しながら列ぶんだろうなぁ。

    蓮華畑、昔はよく見かけましたもんね。いとこの家に遊びに行くと　いとこが
    蓮華畑で1人でしゃがんで　遊んでて
    駅から30分ぐらい歩いてきた私たちのことを見つけると　すっごっく
    喜んでくれた事を思い出すpoemです。
    嬉しさは伝わりますもんね。

    1. ぼくが子どもの頃の通学路にも、蓮華畑がたくさんありました。
      みんなで屈み込んで、蓮華の花弁を抜き取って、密を吸ったものでした。

      蜂蜜まんは食べた事ないです(^-^;
      でも毎年恒例で前の会社の友達３人で豊川稲荷に初詣に参拝して必ずお土産に宝珠まんじゅうを買って帰ります(^-^)　私も一度は蜂蜜まん食べてみたいです(^-^)　三重県津市の方面に行った時は買って食べたいです(^-^)　ひょっとしたら阪名高速道路に行った時はサービスエリアに売っているかなぁ(^-^)　ちなみに露店で売っているベビーカステラにあんこが入っている感じのかなぁ(^-^)/

    1. 大判焼や大アン巻きとは異なり、ふんわりと軽い感覚で、ぼくでも一度に3～4個は行けちゃうほどの美味しさですよ。
