「なぁ～んちゃって里芋ニョッキ～茄子とチキンのクリームトマトソース添え」
朝締めのチキンのササミをさっと湯通しし、ごま油・ネギ・おろし生姜・ゴマの薬味で、晩酌のお供として大いにいただいた、その残りの湯引きしたササミが残っておりました。
それをバターとニンニクの微塵切りで残ったササミと茄子をソテーし、そこにトマト缶を開け、白ワインと生クリームを加え、コンソメとハーブミックスにブラックペッパーで味を調え、最後にとろけるチーズを加えて一煮立ちさせておきます。
次に皮を剥いた里芋を、シリコンスチーマーでスチームし、フードプロセッサーで粉砕しホイップして、ボールに移して小麦粉を適量加え、団子状にして沸騰した湯で茹で上げて皿に盛り付け、トマトソースを注ぎ入れれば完了。
里芋のとっても口当たりの良い、見た目は歪ながらも、不格好でちょっと柔らかな、なぁ～んちゃってニョッキとなりました。
これまた白ワインにはピッタリな、イタリア～ンなランチとなりました。
今回もまたまた観察眼の鋭い皆様の、ニアピン続出となりました。

オカダさんといえば 豚肉というイメージがあったので てっきりそうかと思ってました(笑)
それにしても 里芋をそのまま使うんじゃなく粉砕して団子状にして使うとは！

いやいや、これまたお恥かしい限りです。
ササミは高蛋白で、お手軽に酒のあてに出来るので、新鮮なササミがあるとついつい手にしてしまっています。
ニアピンだな(笑)里芋は煮るだけじゃないのは以外でした。一度試してみますね。
